Chuck cut is a flat iron.
Its sliced from the shoulder of the steer/bullock. While most chuck is tough, flat iron comes from the top blade muscle thus way soft.
The marbling of this steak gives it a rich flavor, so “beefy.” Though flavorful enough to be enjoyed on its own, it also benefits from a marinade and often picks the flavors of the ingredients it is amalgamated with.
Grill a flat iron or cook it in a hot pan to about medium-rare.
